Rosé beef is just a fancy way of saying pasture raised young beef (or pasture raised veal). We raise our bulls to around 300 pounds (or 4ish months), similar to the other animals on our farm (we raise meat chickens to 8 and 16 weeks, pigs to 6 months, and turkeys to 6 months). Due to this fact, the bulls get to skip many painful experiences they would have to have if they were to get full grown (castration, dehorning, vaccination, antibiotics, etc.). And as a result we get high quality, tender beef.
