We had our first harvest of 2023 - one green pepper and a tiny handful of lettuce. I knew I had to make something with the delicious pepper, but I needed it to be quick and feel summery.
And that is how this recipe was born. I have always loved penne with peppers and parmesan cheese, so I thought I'd elevate it with some spices and our pasture raised pork sausage.
I will warn you that this recipe is more of a homemade recipe than most of ours - more measuring with your heart. But it is so so good! Also, I am listing this recipe as I wish I had made it - with two peppers and an onion.
2 bell peppers - diced
1/2 a medium onion - diced
1 pound of New Frontier Farms bulk sausage
1 box (16 oz.) of penne pasta
2 tbsp. olive oil
1 tbsp. minced garlic
1/2 tbsp. garlic salt
1/4 tbsp. paprika
Sprinkle of red pepper flakes (more if you like it spicy)
1/4 cup of parmesan cheese
Warm olive oil in a cast iron pan (any pan will work but cast irons work the best) and add minced garlic once oil is warm.
Once garlic becomes fragrant, add bulk sausage, green peppers, onions, garlic salt, paprika, and red pepper flakes. Cook until sausage is browned.
While sausage is browning, cook penne pasta according to the box.
Place cooked penne into a bowl, add the browned sausage mix and the parmesan cheese. Stir until well mixed.
Serve warm and can top with extra parmesan if desired.
